So, after an initial 2 jam trial run at Chris’ Mom’s house a couple of weeks ago (Raspberry-cherry jam and Red current Raspberry Jam) and since we have already gone through a jar and a half of the jam we brought home – I decided to attempt a solo effort during Audrey’s nap today. I should have know that as soon as I attempted something productive she would decide to wake up…

Since it is a Marmalade, the first step was to cut thin strips of lemon peel and then boil them to soften. I have no idea if I did the strips right… I tried to get as little of the white part on as possible, and then cut the strips pretty small.

Yes, we have a 3 week old, and some friends and family think we were a little bit crazy, but we had to have our traditional Thanksgiving dinner… seriously it is the holiday that we really do…
Anyhow, for years I have wanted to document the food, but I never had the proper camera, this year I figured I had no excuse – so I basically took pictures of everything…

So Tuesday was my friend Colleen’s baby shower – the event that I decided was the perfect excuse to learn how to decorate a cake with fondant. Having completed my practice cake a couple of weeks ago, I decided to up the stakes this time (and feed more people). I had intended to do a three tiered cake this time, but after baking an 8 inch white cake layer and a 10 inch chocolate cake layer I was exhausted, so I decided 2 would be enough… (we did end up with plenty left over – so I think it worked out).
I baked the cakes and did the buttercream frosting layer on Monday evening and filled them with raspberry buttercream (Thanks Jamie!!)
So, I have been wanting to try out making a Fondant covered cake for ages (likely the desire has come from watching one too many episodes of cake decorating shows on the food network). The cakes always look so beautiful, and it just appears that you can do a much more professional looking job than at least I ever can using butter cream (I never can get it really smooth…) so as I have a friend’s baby shower coming up that I am helping to host, I figured that was the perfect occasion to roll out my hither to undiscovered fondant baking skills…
